Thai Cucumber & Radish Salad

Serves: 6 Prep Time: 15 minutes

¾ cup, Rice Wine Vinegar
2 Tbls, Sugar
3 Tbls, Safflower or Sunflower Seed Oil
1# Radishes, finely sliced
1# English Cucumbers, finely sliced
1 ea, Sweet Red Pepper, seeded, thinly sliced, then lightly chopped
½ cup, Basil Leaves, fresh, sliced
¾ Tbls, B & M Oriental Sea Salt

In a bowl, mix, vinegar, sugar, oil, sea salt, whisk to incorporate well. Add radishes, cucumbers, pepper, mix well, place in refrigerator to marinate for 45 minutes before serving. Season with additional sea salt before serving, if needed, finely grind salt, add to salad.

Platting:
Place a piece of lettuce of choice on plate, spoon on cucumber mixture, garnish with basil leaves. Served chilled.
