Southwestern Baked Beans

Serves: 8 Prep & Cook Time: 3 1/2 hrs
1# Pinto Beans
3 qts, Water
1#, Salt Pork
2 cups, Tomatoes, canned, diced w/juices
1 cup, Onion, random diced
1 cup, Celery, sliced then diced
1 ½ Tbls, B & M Southwestern Style Sea Salt
4 Tbls, B & M Chipolte Mustard
¾ cup, White Sugar
4 Tbls, Apple Cider Vinegar
3 Tbls, Parsley, finely ground

Look beans over for stones, rinse, soak overnight in water.
Place in suitable pot, cover with fresh water, add all ingredients, bring to roaring boil, then slow simmer for 30 minutes covered. Stir often to keep beans off bottom of pan. When this time is up, pour beans into baking dish, cover, place into 300 degree pre heated oven, for appx. 3 hours. Check for liquid in beans, if requiring more, add more hot water. Bake until done. Serve out of baking dish.
