Caribbean Island Tomato Salad
(Institutional)

Serves: appx. 60, ½ cup portions
15# Ripe Tomatoes, ¾” diced
1 ½# Red Onions, ¼” sliced
2# Yellow Peppers, ¼” sliced
2# Green Peppers, ¼” sliced
½# Green Onions, sliced
1 cup Cilantro, sliced**
** Italian Leaf Parsley can be substituted here if Cilantro is not available
1/3 cup Lime or Lemon Juice (Lime Preferred)
3/4 cup B & M Caribbean Style Sea Salt*
*taste after 30 minutes in refrigerator for flavor desired

Prep vegetables as listed
Toss with B & M Caribbean Style Sea Salt
Place in refrigerator for 1 hour before serving
Mix before serving time

Variations:
Omit Lime or Lemon Juice: Add
½ btle B & M Champagne Scallion Vinegar & ¾ btle, B & M Pepper & Garlic Grapeseed Oil
Mix well and marinate for a min. of 30 minutes before serving
