Serves: 6 Preparation Time: 30 minutes Cooking Time: 15 minutes
12 ea. Medium, Tiger Shrimp, shelled, cleaned & de-veined, with tails on
12 ea. Medium, Sea Scallops
12oz. Swordfish Steak or Fresh Tuna, cut into 1 oz. pieces
1 ea, Red Onion, cut into 1” dice
12 ea, 1” size, Cherry Tomatoes, whole
1 ea, Sweet Red or Yellow Pepper, diced 1”
1 ea, Green Pepper, diced at 1”
3 oz. Grapeseed Oil
1 Tbls, B & M Caribbean Style Sea Salt
2 oz, Lemon Juice, fresh
1 ea, Lemon for garnish, cut into wedges, place pieces on cocktail forks, reserve for serving time
Prep all items accordingly, except tomatoes. Place in mixing bowl toss well being careful not to break scallops, cover, and place in refrigerator to for several hours to acquire flavor of B & M Sea Salt.
Skewer fish and vegetables evenly. Prep grill with spray pan while cold, heat to medium temperature, then and place on grill. Using mixture from bowl, brush on skewers lightly while cooking. Keep lid closed on grill while cooking to retain heat. When shrimp are firm (when the tails spring back) remove from heat. Serve with Lemon wedges
