Bowtie Pasta with Mushrooms & Cream

Serves: 2 Prep & Cook Time: 30 min
12 oz, Bowtie Pasta or pasta of choice
½ cup, Red Onions, finely diced
12 oz, Baby Bella Mushrooms, finely sliced
1 Tbls, Garlic, finely diced, then crushed
½ cup, Roasted Red Pepper, in oil, drained, finely diced
2 oz, White Wine, dry
2 ea, Scallions, finely sliced
4 Tbls, Olive Oil
1 cup, Whipping Cream
½ tsp, B & M Mediterranean Sea Salt or to taste
1/4 cup Parmesan Cheese, grated

Cook pasta as directed on package. In the mean time;
Heat olive oil up in sauté pan, add onions, mushrooms, garlic sauté' until onions are transparent. Add wine, reduce to ½, then add roasted red peppers, B & M Med Sea Salt. Reserve for later use. Whip cream until peaked with egg beater. Place well drained pasta back into pot, add mushroom mixture, add cheese, mix well. Add whipped cream, toss lightly then serve immediately. Garnish with scallions.

Variations:
Use most any pasta you like for this dish.
Several anchovies can be added to this dish during the wine reduction.
