Apricot Pepper Jam Stuffed
Chicken Breasts with Yogurt Sauce

Serves: 4 Prep Time: Appx. 35 minutes
4 ea. 7 oz Chicken Breasts, boneless, skinless, slightly flattened
Filling: Mix these together
4 tsp, B & M Apricot Pepper Jam
2 Tbls, Onions, finely chopped
2 Tbls, Roasted Almonds, slivered or sliced
2 ea, Scallions, finely sliced
¼ tsp, B & M Mediterranean Style Sea Salt, finely ground

Sauce:
Mix these together well
1 cup, Yogurt, plain or non fat, at room temperature or just slightly warmed
¼ cup B & M Groovy Garlic Mustard
Balance of B & C Apricot Pepper Jam
Tbls, Parsley, finely chopped

Place filling mixture, equal amounts, inside each piece of chicken, roll up and secure with toothpicks. Cover with greased brown paper, bake at 350° for 30-40 minutes or until chicken is done.
Remove from oven and spoon warmed apricot-yogurt sauce over each breast. Serve.
