Serves: 4 Prep & Cook Time: 30 min
1 ½# Pork Loin Chops, diced into 1" cubes
1 jar, B & M Apricot Pepper Jam
1 Tbls, Orange Liquor
2 Tbls, Butter, sweet cream
2 ea, Ears of Corn, broken into quarters
1 ea, Green Pepper, diced at 1"
1 ea, Onion, diced at 1"
4 Skewers, 10" long
2 cups, Rice, long grain
4 cups, Chicken Broth
¾ tsp, B & M Mediterranean Style Sea Salt, finely ground
4 Bay Leaves
Pilaf:
Bring chicken broth, B & M Mediterranean Style Sea Salt, to boil with bay leaves, add rice, place in oven dish with cover, bake @ 350 degrees, for 10 minutes, fluff rice, continue to bake additional 10 minutes or until done.
Prep all ingredients. Place equal amounts on skewers as desired. Place in small baking pan to fit skewers. Heat Apricot Pepper Jam, liquor, butter to slow simmer only. Pour over skewers, place in fridge to marinate for several hours or more. Using broiler in stove, broil turning often to cook evenly. Serve on bed of rice pilaf.
