Serves: 4 Prep & Cook Time: 30 min
3 cups, Apples, eating variety, peeled, cored, coarsely chopped
2 jars B & M Ginger Peach Preserve
½ cup Golden Raisins
3 Tbls, Brown Sugar
1 ½ Tbls, Cider Vinegar
¼ tsp, Clove, ground to taste only
1 Tbls, Parsley, finely chopped
¾ cup Chicken drippings, skimmed of all fat
Sea Salt to taste
Heat Ginger Peach Preserve in pan, until just simmering, add all ingredients. Bring back up to simmer for several minutes only. Do not cook apples into applesauce. Taste for seasonings. Mixture should be sweet, with just a hint of sourness only, with all flavors being evident. Clove should just be evident only, not overpowering. Place in sauce boat, serve.
Variations:
Omitting the ½ cup chicken drippings, use for a basting sauce for chicken in the oven or broiler or fowl.
